Papa Filipou Ice Cream

Stop expecting your Mum to make you Machalepi! Seriously its a shame to call this a recipe but, Recipe below 👇🏻 • • For each portion, we need 1 huge full spoon of maize starch and 1 cup of water. Thats it! 🤣 For 4 people, add 4 spoons, 4 lukewarm glasses of water into a cooking pot. Turn on the stove to high, and constantly stir till it gets thick. Takes 4-5min. Then in bowls or a pyrex slightly wet the inner surface, and pour the machalepi into your preferred bowls. Now leave to cool down, 20min. Then add a thin layer of water on top and place in fridge to freeze. Finally, I used Stevia Rose cordial, Rose water, Stevia sugar, and Stevia Rose Sorbet icecream by @papafilipou_icecream Also found this beautiful sweet scented Geranium that smells absolutely wonderful! Saw these beautiful 🍪 chocolate chip cookie dough biscuits that @foodlogger.cy made yesterday, and decided to make them in a skillet and top off with a scoop of 🍦 vanilla icecream from @papafilipou_icecream Find the recipe from @foodlogger.cy Its really worth it! 🤤 (theirs are better than mine 🙈, trust me)

Since yesterday I was craving anything Lebanese, decided to put together this cake since @papafilipou_icecream sent me some tubs to try out. I wouldn't call this a recipe but a construction, so here it is! 1 tub Mastichas Chiou icecream from @papafilipou_icecream 6 normal sized kateifi sweets from your favourite confectionery store. Alternatively you can buy fresh kateifi, mix some nuts and honey and make yourself for the base. Blend the kateifi sweets in a blender to get it in a sticky gooey paste. Then palce it in a 25cm baking tin. At this point you can't really mold it yet, try and build it on the sides, and leave a hole in the middle. Put in the freezer for 30min. Now you can make a nice rectangular base. I would put in freezer for another 10 min. Now scoop all of your icecream in the base covering it to the top. Now cover with cling film and place in the freezer overnight. You may also use pistachio icecream mixing both flavours with a nice swirl effect. Next day with a knife carefully scrape along side the cake so it can let loose from the baking tin and flip upside down.
